This hearty salad is my usual go to quick lunch if I am crunch for time. As a mom of two I always have to think fast and easy ways to get nutritious food into my system. What better way to do it then to come up with creative salads that not only fill my tummy but also satisfy my cravings for sweets. This pear and strawberry green salad is one of my all time favorites.
Ingredients needed : Serves Two
1 cup of any leafy green lettuce of your choice
1/2 cup of chopped fresh kale
1 or 2 pears (depending on your sweet cravings) chopped up in any shape you like
1/2 cup of strawberries chopped
2 tbs of pumpkin seeds (roasted) OR 1/2 cup of walnuts
1 tbs of Vegenaise or you can use Mayonnaise
1 tsp of mustard (preferably organic)
Dash of apple cider vinegar (preferably organic)
1 tbs of pure maple syrup
pinch of salt and fresh ground black pepper
1 tsp of extra virgin olive oil
For the dressing mix all the ingredients together with a fork and then do a quick taste test. Then pour the dressing on top of the salad and toss it around until the salad is well coated. Serve and enjoy!!
